日本でも数少ないうなぎ料理専門店として、一途にうなぎ本来の旨さだけを求めて参りました。
活鰻、お米、調味料一つにもこだわり全国より厳選したものを仕入れております。
伝統料理としてのうなぎの味わい、歯応えを残しつつ
『蒸しを入れたふっくらとしたうなぎ』
『醤油勝ちで甘みを控えた秘伝のタレ』
これらの技法、味付けを基に、他に類を見ない一枚を味わって頂けるものと存じます。

Founded in 1904As one of the few traditional eel restaurants in Japan, we have devoted ourselves to pursuing the pure, authentic taste of eel.
We carefully select live Japanese eel, rice, and seasonings sourced from trusted producers across the country.
While preserving the classic flavor and firm texture of eel as a traditional dish, we steam the eel to achieve a delicate, fluffy finish, and glaze it with our signature soy-forward sauce that is intentionally less sweet. Through these techniques, we are confident that you will experience a truly exceptional kabayaki.
Honoring Honda’s long‑standing tradition of “bringing out the natural flavor of eel,” we remain committed to serving the finest dishes— not only to the people of Iiyama, but also to guests who travel from afar.
